Keto Coconut Sunshine Collagen Cookies
The Keto Coconut Sunshine Collagen Cookie will surely bring a smile to your face. It is rich and tasty with a tropical kick from the lovely coconut flavours. The colour is bright and yellow like sunshine! Collagen is added to enhance the cookie's nourishing characteristics. With only 1.2g net carbs per piece, it will fit perfectly in your keto meal plans. Enjoy it with coffee, tea, with friends and anytime of the day. Sugar free. Gluten free.
60g butter (room temperature)
2 drops of vanilla essence
1 pinch of salt
3 large egg yolks
1 teaspoon apple cider vinegar
60g almond flour
35g coconut flour
1 teaspoon collagen powder
1/4 teaspoon baking soda
1/4 teaspoon baking powder
20g chocolate drops for melting
Cream the softened room temperature butter with erythritol, vanilla essence and salt. A hand blender is recommended.
Mix all the dry ingredients together.
Add the dry ingredients mixture into the creamed butter mixture. Mix well.
Add the egg yolks and apple cider vinegar into the creamed mixture and mix well.
Divide the dough into 8 balls, and place them on the baking paper and tray.
Press the cookies down with your 3 fingers.
Bake at 150 deg celsius for 12 minutes.
Optional: When cooled, drizzle melted keto chocolate over the cookies.
For the chocolate drizzle, melt your favourite keto chocolate and drizzle over the top.
